Real beer cheese, made from scratch, with bratwurst folded right in. Shiner Holiday Cheer and TFTI Cajun Honey Rub give it a kick you don't get from the jarred stuff. This is made for game day!
1. Brown the bratwurst pieces in a saucepan over medium heat until cooked through with a little color on the edges. Remove and set aside.
2. In the same pan, melt the butter, whisk in the flour, and cook about a minute — that's your roux.
3. Slowly whisk in the beer, then the milk, a little at a time so it stays smooth. Simmer 3–4 minutes until slightly thickened.
4. Stir in the Cajun Honey Rub and hot sauce. Simmer 2 minutes.
5. Lower the heat and stir in the cheese a handful at a time until melted and smooth.
6. Fold the bratwurst back in. Salt to taste.
7. Pour into a bowl and dunk with warm pretzel bites.
