This might be the easiest pulled pork I've ever made and somehow the best. Nearly zero prep Hatch Chile Pork Butt — straight out of the package and onto the smoker, no seasoning needed. Piled onto Martin's Potato Rolls with Grillo's Pickles, pickled red onions, and Best Damn BBQ Sweet Lady Love. This one brought my whole love for pulled pork back.

1. Place the Hatch Chile Pork Butt straight on the smoker — no seasoning needed, it's already coated and ready to go.
2. Smoke 275° with Bear Mountain Cherry Pellets until probe tender and easily shreddable.
3. Rest, then shred completely.
4. Pile shredded pork onto the rolls.
5. Top with Grillo's Pickles, pickled red onions, and a drizzle of Best Damn BBQ Sweet Lady Love.
