A delicious side dish featuring pinto, black, and baked beans, mixed with sautéed bacon, red onion, green bell pepper, brown sugar, W sauce, honey, and a dry rub, then smoked until tender and flavorful.
1. Cook the bacon until crispy, then chop it into small pieces.
2. In the residual bacon fat, sauté the chopped red onion and green bell pepper until softened.
3. In an aluminum half pan, mix all the ingredients: the pinto beans, black beans, baked beans, sautéed red onion and bell pepper, chopped bacon, brown sugar, W sauce, honey, and Rack City rub.
4. Place the pan on a smoker preheated to 275-300°F (135-150°C).
5. Smoke for 90 minutes, stirring the beans every 20-30 minutes to ensure even cooking and smoke distribution.
